Ingredients:
- 2 cups self-raising flour
- 11 tbsp bush blend seasoning
- 1/2 cup unsalted butter, cubed and room temp
- 3/4 cup water (adjust as needed)
Instructions:
1. Preheat the Oven:
- Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.
2. Combine Dry Ingredients:
- In a large mixing bowl, combine the self-raising flour and bush blend seasoning.
3. Rub in the Butter:
- Add the chilled bush blend butter to the flour mixture. Use your fingertips to rub the butter into the flour until the mixture resembles coarse breadcrumbs.
4. Add the Water:
- Gradually pour in the water, mixing gently with a butter knife until the dough comes together. Avoid overmixing to keep the damper light.
5. Shape the Dough:
- Turn the dough onto a floured surface and knead lightly until smooth. Shape it into a round loaf and place it on the prepared baking tray.
6. Bake the Damper:
- Using a sharp knife, score a cross on the top of the dough.
- Bake in the preheated oven for 25–30 minutes or until the damper is golden and sounds hollow when tapped on the base.
7. Serve Warm:
- Serve the damper warm with extra butter, jam or honey.
Tips:
- For a flavour twist, add a handful of grated cheese or fresh herbs to the dough before baking.
- This damper is best enjoyed fresh but can be reheated in the oven the next day.
