Cinnamon Myrtle French Toast Bites

Ingredients:

  • 1/2 cup full cream milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp cinnamon myrtle, plus extra for topping
  • 2 slices sourdough bread, chopped into bite-sized squares
  • Butter, for frying
  • Icing sugar (optional)
  • Seasonal fresh fruit and favourite yoghurt, for serving

Instructions:

  1. In a mixing bowl whisk together the milk, egg, vanilla extract and cinnamon myrtle until well combined.
  2. Add the sourdough pieces to the egg mixture, ensuring they are fully coated.
  3. In a medium-heat pan, melt a small amount of butter.
  4. Once the butter is sizzling, add the coated sourdough pieces in a single layer. Fry until golden and crispy on each side, about 2-3 minutes per side.
  5. Remove from the pan and transfer to a serving bowl.

To Serve:

  • Sprinkle the warm French toast bites with a dusting of icing sugar and a pinch of cinnamon myrtle.
  • Top with fresh, seasonal fruit and a dollop of your favourite yoghurt.

Extra Tip:

For a sweet, caramelised topping, fry a pieces of cubed apple in the pan before or after the toast bites and scatter over the finished dish. Enjoy!
