Ingredients:
- 1/2 cup full cream milk
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp cinnamon myrtle, plus extra for topping
- 2 slices sourdough bread, chopped into bite-sized squares
- Butter, for frying
- Icing sugar (optional)
- Seasonal fresh fruit and favourite yoghurt, for serving
Instructions:
- In a mixing bowl whisk together the milk, egg, vanilla extract and cinnamon myrtle until well combined.
- Add the sourdough pieces to the egg mixture, ensuring they are fully coated.
- In a medium-heat pan, melt a small amount of butter.
- Once the butter is sizzling, add the coated sourdough pieces in a single layer. Fry until golden and crispy on each side, about 2-3 minutes per side.
- Remove from the pan and transfer to a serving bowl.
To Serve:
- Sprinkle the warm French toast bites with a dusting of icing sugar and a pinch of cinnamon myrtle.
- Top with fresh, seasonal fruit and a dollop of your favourite yoghurt.
Extra Tip:
For a sweet, caramelised topping, fry a pieces of cubed apple in the pan before or after the toast bites and scatter over the finished dish. Enjoy!
